What the heck does "Flat Tack" mean???

Flat Tack: no, not a push pin or a thumb tack.  Flat Tack is slang we picked up during our time living in New Zealand and Australia.  It means "full speed, very busy, or as fast as possible".
Used in a sentence: "How are you today?"
"Can't chat now, I'm flat tack, mate!"
Sometimes farming feels like a battle against time, especially when you're just starting out and developing all of the necessary infrastructures.  When we returned from our travels abroad we immediately jumped into figuring out how to get our own small farming business started.  We are powered by hope for a better future, love of delicious and nutritious food, and the pocket change left over from our trip.  We have embraced an amazing opportunity that has presented itself, a beautiful vineyard with some extra space not in use!  So, why not make it a productive garden with the power to feed people healthy, abundant, chemical free produce?!  That is our mission and we aim to use the training we've gained over the past few years to create a garden that gives back to the earth and to those who take care of it.
